I really liked this Junmai Ginjo from Nagano. Its nose evokes the white fleshed fruits of the orchard. Granny apple and pear in particular, followed by notes of cereals and white flowers. On the palate, its roundness is well balanced by a tangy finish with good length on juicy pear, candied lemon and fennel. This beautiful balance and this intensity of flavors are an invitation for a second drink. Kampai!

After getting contacted by MATERIA and receiving a sample from them, we decided, the chef, the restaurant manager and myself to include sake in our food & wine pairing on the tasting menu. It is paired with a cold starter: gray sea bream mounted like a mille-feuille. It is a starter made with oysters, nori seaweed, turnip, Granny Smith apples and caviar. The sake being not too strong, it goes very well with this starter and customers are delighted. In terms of taste, MATERIA is a very interesting product that allows you to alter classic food & wine pairings.
